Iced coffe, grocery shopping, laying out in the sun, and homemade pizza makes a Saturday everything that it should be. I've been fooling around with my pizza dough recipe for almost a year now and I think that I finally found the best one. It also happens to be the fastest and easiest, which I'm learning more and more is a huge selling point in my favoring of certain recipes. Now, don't get me wrong... sometimes a detailed, complicated, and time consuming recipe is what you need to achieve certain outcomes, but pizza dough on a Saturday night is certainly not one of them.
Alright, here we go...
2 cups flour (all purpose or whole wheat!)
1 tsp sugar
1/2 tsp salt
1 package of dry active yeast
3/4 cup warm water
1/4 cup olive oil
Put all dry ingredients in mixer with dough hook attachment. Mix on low speed until incorporated. While mixer is running, pour in water and oil. Mix on medium speed until ball forms, making sure to stop and scrape the sides of the bowl once or twice during the mix. This should take a maximum of five minutes.
Remove the dough and work into ball. Flatten and stretch into a 6in disc and wrap with plastic wrap. Let rest for 20 minutes on counter. In the meantime, preheat your oven to 400F.
After 20 minutes or so, come back to your dough and stretch it onto an oiled sheet or pizza pan. Bake for 10-12 minutes or until the edges start turning golden. Remove and lower oven temp to 350F.
Now, it's showtime! Put whatever ingredients you want on the pizza. This particular night I made BBQ chicken with red onions, cilantro, and mozzarella. You could go classic with a red sauce, pepperoni, and cheese or be creative! It's hard to mess it up at this point.
Put back in 350F oven and bake another 10-12 minutes or until the cheese gets bubbly and edges are golden brown. Remove and wait 5-10 minutes before cutting to let the ingredients come together and, hey... it's too hot! hell-ooo!
